Utrecht is approximately a 45 minute train ride (approximately €20 Euros round trip for the day) from Amsterdam Centraal, making it an ideal day trip with trains running every 10-15 minutes.

Recommended itinerary:

Take a 12-minute walk from the Utrecht train station to Dom Kerk and look for the DOMUnder Tour. Book a tour for the day. Advanced tickets may be available online. The DOMUnder Tour is a fascinating archaeological tour of the history of the DOM which touches on the Catholic Church's roots in the area. You get to actually go underground and see the historical ruins for yourself.

Cost is about EUR 14.50 Adults and EUR 10 for children under 18. Allow for about 1.5 hours for the entire tour.

After booking the tour, head to the St. Catharine Cathedral and convent and museum.
